A guide to Maui: Hikes

Maui is absolutely breath taking, it doesn’t matter what you are doing.. whether you’re driving down the poly and see that coastal drive, or you’re shopping at the grocery store and when you walk out you see the valley isle (scenic mountains) which Maui is known for. I am on a travel assignment right now in Maui, I have lived here several months before. I am going to give you a locals guide to visiting Maui.                                          Hikes shoots and ladders This one was probably the scariest, thousands of people do it each year, but with some peer pressure I was pushed to do it haha. Being afraid of heights is not easy when most hikes in Maui require some elevation. This hike is on the west side, Honolua Bay in mile marker 47. Simple PineNana Nice Cream

Really obsessed with nice cream, theres no such thing as overdosing on bananas right?! LOL… adding simply pineapple to my nice cream is my fave, sometimes the simplest ones are the best ones!…. I swear my nice cream photo looked better, but I couldn’t wait to take a bite! What you’ll need: 4-5 frozen bananas, if you want a bigger serving than go ahead and put a couple more frozen bananas in there. **Please make sure your bananas are frozen, if they are not it’ll be smoothie like consistency which defeats the purpose** 1/3 of a cup of slice pineapple. Instructions: Place frozen banana in a quality blender. Blend until frozen bananas are a thick  consistency, you may have to put bananas in place back in the bottom, they have a tendency to stick to the side using my blender.   Add pineapple until blended well. Enjoy!!  

Date balls

So I literally have the biggest sweet tooth. Also I like a crunchy sweet snack, this is such a healthy way to kick your bad sugar addiction. This has only two ingredients and very easy to make. What you’ll need: Granola Date Paste ( I have a post on how to make) Instructions: Lay granola out on a large plate. Grab some date paste and make into a ball circular shape. Roll the paste onto the granola until you’ve got a solid granola ball. Make as many as you like! Chill in fridge for about 30 minutes. Enjoy!

Date paste/spread 

ONE INGREDIENT! All you need is a good blender. These taste like caramel. You will not be sorry! Place about 15-20 dates in a blender, make sure they are pitted and moist, if you didn’t find any moist dates just soak them in hot water for 10 minutes… I accidentally bought the ones with pitts and I had to de-Pitt all of them. Oops! Blend until paste consistency or to your liking. Note that these will stick to the walls of your blender and I just have to go back and place them on the bottom with a spoon… If it is too dry in consistency put some water little by little to moisten the paste. I used this for my chocolate date cups and granola date balls. So yummy!! Enjoy!!!

Vegan Date,coconut, or pb chocolate cups

Peanut butter filled Date filled Coconut manna swirl       These are honestly one of the easiest sweet treats you can make. What you’ll need: Semi sweet chocolate mini chips (I use enjoy life brand because they are dairy, nut and soy free) Date paste (if you want the date filled cup) Coconut manna, natural cane sugar (if you want the coconut swirl cup) Peanut butter -try to get it at its purest form, I make mine at home- (if you want the peanut butter cup) A muffin/cupcake sheet and paper bake cups so they don’t stick Instructions Melt about a cup of your chocolate chips in a microwave or on the stove until it is creamy liquid consistency Once your chocolate is melted, start putting a layer of chocolate (not too much) in the paper bake cups that are in the cupcake sheet. even the first layer of chocolate ( I like to tap my sheet onto the table to easily even it out) Put your choice of filling onto your first chocolate layer, carefully..so it won’t sink to …

Mango & Sticky rice with coconut cream

One of my favorite Thai dessert dishes. I don’t like buying mango and sticky rice because sometimes I like my rice a little more coconuty than what they sell in restaurants. I made a dipping/cream sauce with mine to add flavor to the rice…. And it is so amazing! What you’ll need: 1 cup of rice Mangos 1 or 2 depends on how much you’ll want. I also used alfalfa mangos which are my fave. All purpose  flour (I use tapioca because it is gluten free) Coconut milk Natural cane sugar Coconut manna (I’ve never seen anyone use this but it makes a world of difference in the flavoring) Instructions: First things first you must soak your one cup of rice overnight.. If needed to have dish by today I’ve seen people soak for 30 mins.  Once rice is soaked, put it in rice cooker/steamer. Work on your sauce while your rice is cooking There will be 2 sauces made one sauce to soak rice after it is cooked and my coconut cream. 1st sauce …

tropic smoothie

This smoothie is one of my favorite afternoon snacks, if you need a little pick me up and some hydration…this is a must make!   what you’ll need 1/3 mango slices 1/3 of ripe papaya 1/3 of sliced banana tsp. of lime juice 2/3 coconut water scoop of ice ( optional ) blend in blender….then there are optionals: I like to top all smoothies with granola, it gives it that extra umph that I need.   Optional Toppings: Organic Granola Organic Dried Coconut Flakes ENJOY!

  how many of us are mindful of ourselves when we are stressed? Stress is such a common status of being that we entirely ignore it. Our bodies have different ways of telling us we are stressed. Some sign are: irritability, fatigue, insomnia, and cravings for junk food ( probably due to lack of sleep). Most of these are all a Catch 22…. symptoms of stress cause even more STRESS, it is just a vicious cycle. here are a few things I do to rejuvenate and de-stress Slow down, breathe, this can be done anywhere! Take a minute from your stressful day and deep breathe. Breathing releases tension and toxins. Pay attention to your breathing…breathe slowly and deeply and just RELAX. Do this as many times as you please. Your body will feel so much more relaxed. Did you know breathing relieves pain?
